Roasted Red Potatoes

Ingredients
Small Red Potatoes, 10-12Extra Virgin Olive Oil, 3 TbspSalt, 1/4 TspBlack pepper, 1/4 Tsp
Directions
Put oven rack in lowest position. Preheat oven to 450 degrees. Wash and dry potatoes, then cut each in half. Toss in a bowl with olive oil, salt and pepper. Put potato pieces in roasting pan, cut side down, in one layer. Roast for 20-30 minutes. Serves 4
