Stephanie's sweet cheat meatloaf

2.25 pounds Ground meat. I am using a combination of equal parts lean beef and turkey but you can use whatever works best for you.4 slices of 100% whole wheat bread1 egg2 tbsp. Extra virgin olive oilSauce:1 tbsp. grape jam3 tbsp. barbeque sauce2 tsp Worcestershire sauce1 tsp yellow mustard seasonings to taste ( salt, pepper, Mrs. dash) depends what you like.
I usually make the bread first. brush each slice with the olive oil on both sides. just a little is needed. I sometime add a little garlic powder as well. Place on a cookie sheet and bake at 350 for about 5 minutes or until toasted (flip once during baking) remove from oven and chop into to small cubes.
whisk all sauce ingredients together, until combined
In a separate bowl mix together both meats, ( I usually use my hands for this) the cubes of bread you toasted, the egg, and a spoonful or 2 of the sauce. Don't over work it, this will make it tough. Just mix enough to combine.
Line a cookie sheet with foil. Shape mixture into a flat shaped loaf. It should take up most of your pan with an inch or 2 of space at the sides. the loaf will only be about an inch tall.
Brush remainder of sauce on top and around edges of your loaf. Bake at 350 for 35-45 minutes. ( I use a meat thermometer to know when it is done)
Serving Size: makes a large flat loaf divided into 8 even slices
