Bok Choy with Noodles

Ingredients
1 Tbsp. Olive Oil1 clove garlic minced2 slices onion, chopped1 slice cooked ham, diced1/2 tsp. crushed red pepper1 Tbsp. white wine vinegar1 tsp. Soya Sauce1/2 tsp. Sesame Oil1/4 c. low sodium chicken broth1/4 tsp. corn starch1 tsp. granulated sugar3 heads baby bok choy, sliced lengthways100 gm. fresh udon noodles
Directions
Sauté ham, red pepper, onion and mushrooms in oil until lightly browned. Add garlic for one minute. Add vinegar, Soya Sauce and Sesame Oil. Immediately add Bok Choy, sprinkle with sugar and cover. Cook for 3 minutes. Add noodles and Corn Starch mixed with small amount of water. Stir to thicken. Serve.
