Fiesta Chopped Salad

Ingredients
Sweet Red Pepper 1 medium, choppedSweet Yellow Pepper 1 medium, choppedTomato 1 medium, seeded and choppedEnglish Cucumber, choppedZucchini 1 small, choppedScallions 2, choppedParsley Fresh 2 Tbsp., mincedEVOV 2 Tbsp.Red Wine Vinegar 1 Tbsp.Sugar 1/2 tsp.Salt 1/4 tsp.Pepper Black 1/4 tsp.Avocado 1 large, peeled and choppedLemon Juice 1 Tbsp.
Directions
In a large bowl, combine the first seven ingredients. In another bowl combine oil, vinegar, sugar, salt, and pepper and whisk until blended. Drizzle over vegetables and toss to coat. Toss avocado with lemon juice and then add to vegetables. Serve with a slotted spoon.
