Cauliflower Rice

Ingredients
1 Cauliflower, Large Head2 tsps. Coconut Oil You can add garlic or curry etc.
Directions
Remove heart of cauliflower, cut in large pieces, transfer to food processor. Chop to desired consistency.

Heat coconut oil in a non-stick frying pan over medium high heat and add chopped cauliflower.
Cook for approximately 5 min. or until desired consistency. Use like you would regular rice. You may add seasonings for example curry, or garlic. Be creative.
