Cream of Fennel Soup

Ingredients
Dry Milk Powder NF w/ Vit A, 1 cup Fennel Bulb, raw, 2 cupShallot, 1/4 c Organic Vegetable Broth, 4 cupCelery, raw, 1 cup, diced salt, pepper, nutmegcornstarch 3TB3.5 cups water2tb butter1 tb Olive oil
Directions
Soften the veggies in oil & butter; add spices & 1/2 the liquid; simmer 45 minutes. Mix the rest of the liquid with the dry milk powder mixing well, add the cornstach and stir into the soup; slowly bring to a boil, stirring all the time. When thick, remove from heat & serve.
