Indulgent Chocolate-Almond Clusters

84 unsalted almonds (shelled)90 grams semisweet chocolate chips (about 252 chips) Cookie sheet lined with Parchment Paper
makes 6 clusters
1. Using a double boiler (or a heat safe bowl resting on top of a pan with an inch of water--making sure the bowl does not come into contact with the water) heat the water to a low simmer.
2. Pour the chocolate chips into the double boiler (or bowl).
3. Stir the chocolate until it is melted.
4. Add the almonds to the melted chocolate and stir until the almonds are completely coated.
5. Remove the almonds and place in clusters (about 14 almonds per cluster) on the parchment lined cookie sheet.
6. Refrigerate for approximately 30 minutes.
*store in an airtight container in a cool place
