Ingredients
1 1/2 lb cooked, shredded, chicken1 150z can diced tomatoes1 160z can Green Chile Enchilada Sauce.. (I use Medium, but less heat use Mild)2 4 oz cans Chopped Green chilis, Mild1 15 oz can Pinto beans, rinsed and drained1 15 oz can Black Beans, rinsed and drained1 Med Onion, chopped2 Tbs. Minced Garlic2 c. water1 15 oz can chicken broth2 tsp Each: cumin, chili powderSalt and pepper to taste.1 15 oz can sweet corn, drained2 TBS. cilantro, choppedcheddar and nonterey Jack cheesesour cream for garnish
Directions
In crock pot combine all ingredients except cilantro and cheese and sour cream.

Cover and cook for 6-8 hours.
Serve with cilantro, some shredded cheese and sour cream if Desired.

    Excellent, tons left over. I put three large chicken breast on the bottom and let them cook the 8 hours. Took them out, shredded, and let cook for another 10 minutes. Really looking forward to having more tonight. - 2/11/09

    Sounds delicious, but why used cooked chicken when you are cooking it for 6 hours? Couldn't you coarsely chop the raw chicken and let it cook in the crock pot? - 10/8/08

    Awesome taste and if, like me, you are sodium sensitive you can use low sodium products and add a bit more heat, you won't miss the salt. I think you made a winner at least for my family you did. Thanks - 6/8/08
