Peach Crumble

6 ripe peaches, peeled, pitted and slicedJuice from 1/2 lemon1/2 teaspoon ground cinnamon1/4 teaspoon ground nutmeg1/4 cup whole-wheat flour1/4 cup packed dark brown sugar4 tablespoons butter, cold and cut into thin slices1/3 cup cooking oats
Preheat the oven to 375 F. Lightly coat a 9-inch pie pan with cooking spray.
In bowl sprinkle peach slices with lemon juice, cinnamon and nutmeg and mix together then put into a prepared pie plate.
In a small bowl, whisk together flour and brown sugar. With your fingers, crumble the margarine into the flour-sugar mixture. Add the oats and stir to mix evenly. Sprinkle the flour mixture on top of the peaches.
Bake until peaches are soft and the topping is browned, about 30 minutes. Cut into 6 even slices and serve warm.
Serving Size: makes 6 servings
