Chicken Chop Suey

Ingredients
2 skinless, boneless chicken breasts1 cup sliced green pepper1 cup sliced red pepper1/2 cup diced onions1/2 cup diced celery2 cups bean sproutsSoy SauceCorn StarchChicken BrothRice
Directions
Cut chicken breasts and cook in a frying pan for 5 minutes (no oil needed in a non-stick skillet). Add 1/3 of the can of chicken broth and add celery and onions. Cook for 3 min. Add peppers and bean sprouts, reduce heat, cover and let simmer. Dissolve 1 T of corn starch in 1/4 cup of water. Add cornstarch mixture to sauce pan along with soy sauce and the rest of the chicken broth and let thicken. When thickened, add to the simmering chicken and vegetables and let simmer 20-30 min. Serve over rice.
