4 lbs Tomatoes (boil to peel & seed), rough chopped1 1/2 tbls Olive Oil1/2 c Chicken Broth1 Onion chopped1 8oz container Mushrooms, chopped1 Red Bell Pepper, chopped3 Garlic Cloves, minced2 cans Tomato Paste1 tsp Italian SeasoningSalt to tastePepper to taste*Optional - for a kick add 3/4 dashes Cayenne Pepper*Optional - 1-2 tsp sugar/Sugar sub (I like mine with 2 packets of Stevia)
Wash tomatoes. Cut an X on bottom and up, then boil for 3 minutes. When cool, peel skin, squeeze out seeds and rough chop.
Over med heat cook onions in olive oil and chicken broth until clear. Add mushrooms, garlic and red bell peppers. Cook for 2 minutes (make sure garlic doesn't burn). Add rest of ingredients, add one can of water for each can of tomato paste, stir well and bring to boil. Turn down heat and let simmer for 50 minutes.
*For smoother sauce, put in blender to desired texture.
Serving Size: Makes 9 1-cup servings
