Creamy Cheddar & Broccoli Soup

2 cups broccoli, choppedapprox. 2 cups 1% milk4 cups vegetable stock3 T. margarine, low fat3 T. flour1 cup shredded cheddar, low fat1tsp. Vegetta or Mrs. Dash salt substitute
steam brocolli in microwave for approximately 3 minutes.
In large pot, melt margarine over med. heat
Incorporate flour with wooden spoon to form a ball.
Season
Add brocolli and vegetable stock & stir with wire wisk until flour mixture is disolved.
Simmer until soup begins to thicken.
Slowly add milk until desired thickness is achieved.
Remove from heat and stir in cheese.
Alternatively, cheese can be used to top individual bowls on serving.
