Vegetarian Quiche

Ingredients
2 cups croutons1 cup red peppers1 cup brocolli1 cup onion1/2 cup mozzarella cheese6 eggs1/2 cup 1% milk
Directions
1. Spray pie plate with Non-stick cooking spray.
2. Preheat oven to 350 Degrees.
3. In a skillet sprayed with non-stick cooking spray, cook vegetables until tender.
4. Layer the croutons on the bottom of the pie plate.
5. Put tender vegetables on top of croutons.
6. Sprinkle the cheese on top of the vegetables.
7. Beat the 6 eggs with the milk, slowly pour on top of the items in the pie plate. Let stand for 5-10 minutes to allow the croutons to soak up the egg mixture.
8. Bake in a 350 degree oven for approximately 20 minutes or until middle of quiche is set.

Let cool a bit before serving.

Makes 6 servings.
