Potato Curry

4 russet potatoes, peeled and cubed2 tbsp canola oil1 medium yellow onion, diced3 gloves of garlic, minced4 tsp curry powder4 tsp garam masala2 tsp ground cumin1.5 tsp cayenne pepper2 tsp salt1 can diced tomatoes1 cup milk1 can chick peas, rinsed and drained
Put cubed potatoes into a large pot and cover with water. Bring to a boil and boil until soft. Drain and set aside.
Warm oil in a skillet over medium heat. Stir in onion and garlic, cook until onions are soft and translucent.
Stir in curry powder, garam masala, cumin, cayenne, and salt. Cook for 1-2 minutes, stirring.
Mix in potatoes, chick peaks, tomatoes, and then milk. Simmer 5-10 minutes.
Serve hot!
