Grilled Catfish and Herb Vinaigrette

Ingredients
6 tbsp Italian dressing2 tbsp finely chopped fresh parsley2 tbsp finely chopped fresh dill2 tbsp finely chopped fresh chives2 tsp dried oregano4 8 oz catfish fillets
Directions
Coat grill rack with non stick spray
Preheat grill to med (300 to 350 degree)

Herb vinaigrette
In a small bowl combine:
3 tablespoon of dressing, parsley, dill, chives, oregano, salt and pepper (to taste)
Mix well
Set aside

Brush both sides of fillets with remaining 3 tablespoons dressing
Season with salt and pepper to taste

Grill, covered 4 to 5 minutes per side or until fish flakes easily
Transfer fillets to a platter, drizzle with herb vinaigrette and serve
