Lime & Garlic Chicken Chili

3 Chicken Breast halves, skin and bone removed- diced1 medium onion chopped2-3 stalks celery 3 cloves garlic-minced1 medium can corn1 medium can black beans1 small can mushrooms1 medium can diced tomatoes1 Jar Pace Lime and Garlic Verde (this makes the recipe so a substitution will not taste the same)Salt and Pepper to taste and I like a little Cumin and Paprika.
I use my Pampered Chef deep dish covered baker in the microwave so this dish is prepared and cooked in 30 minutes. If you don't have the baker:
In a large frying pan or dutch oven on the stove:
Saute the chicken, onion, garlic in coconut or canola oil until no longer pink inside. Add all other ingredients and simmer until flavors have combined and celery has softened a bit. Serve over rice or with a bit of shredded cheese.
