Superfood Kale Salad!

Ingredients
This may be scaled down, but I made a large amount for lunches at work.3 bunches of curly kale- washed, stemmed, and blanched3-4 medium carrots- peeled and grated1 cup raw, unsalted cashew nuts3 cups shelled, steamed edamame1 cup unsalted sunflower seeds1 pint grape or cherry tomatoes2 cups fresh blueberries1.5 cup ground flaxseed1-2 cups dried cranberries1/2 cup red onion, choppedDressing to taste- I recommend Annies Natural vegan Goddess dressing, lite.Be warned: my measurements above are approximate as I usually just eyeball it, so feel free to improvise!
Directions
Remove stems from kale and blanch- boiling for 2-3 minutes followed by 3 minutes in an ice bath. Drain kale then combine all ingredients and enjoy!

Dressing is optional, but I usually toss with a little Annies Natural vegan Goddess dressing, lite.
