Crock pot egg pie

Ingredients
1.5 cups red or white onion, diced1 medium green pepper, diced1 medium sweet potato, grated8 - 10 eggs1 - 1.5 pounds of ground sausage (I used country sausage but in hindsight, I would opt for something with more flavor, like andouille or Italian)Spices to taste - I used salt, pepper, garlic powder, and chili powder but I found it still a bit bland.
Directions
Chop all ingredients and toss in the crock pot, save for the eggs.
In a bowl, whisk the eggs into scrambled consistency, then pour over everything in the crock.
Mix everything together until well combined.
Cook for about 7 hours on low, to make sure the sausage is cooked thoroughly.
