Halloumi,onion and tomato sandwich

Ingredients
2 slices medium tomato1 onion slice ,thin2 oz halloumi cheese cut into 2 slices, do not get the pre-sliced ones the slices are too thin.romaine lettuce leaf ( or other lettuce)Arnolds sandwich thins (or other bread)1.5 tsp olive oil3-5 leaves of basil
Directions
heat 1/2 tsp oil and cook the onions until soft, set aside.
Heat 1 tsp oil in the pan fry the halloumi on both sides until golden brown and crispy

Either toast the bred and then add cheese lettuce tomato , basil and onion OR
halve the bread you are using place halloumi on 1 half
of the bread top with basil tomato and onion fold other half of bread over and grill the whole sandwich.

Serving Size: makes 1 serving.
