Egg Salad

Ingredients
12 peeled, hard boiled eggs5 tablespoons mayonnaise2 tablespoons southwest spicy mustard1/2 medium onion, choppedSalt and pepper to taste
Directions
Mash hard boiled eggs in a mixing bowl. Add mayonnaise and mustard, then stir. Add chopped onion, and salt and pepper. Refrigerate for at least 1 hour before serving.
