Millet Curry

Ingredients
2 ts coconut oil1/4 cup chopped onion1/4 cup chopped bell pepper1 TB green curry paste1/2 cup coconut milk 1 can garbanzo beans1 can creamed corn2 cups cooked millet2 TB almond butter2 TB tahiniSalt and pepper to taste1 TB lime juice
Directions
Heat oil in a Dutch oven or large skillet. Saute onion and pepper until soft. Stir in curry paste. Add coconut milk and bring to a hard boil. Add remaining ingredients, simmer a few minutes.
