Zucchini "Facon"

1 tbsp paprika1 tsp smoked paprika½ tsp black pepper2 tbsp apple cider vinegar3 tbsp maple syrup1 tsp garlic powder½ teaspoon smoked salt, or to taste1/3 cup water1 lb (about 2 medium) zucchini, sliced into "planks" with a mandoline
Combine all the marinade ingredients in a dish and mix well.
Add zucchini slices, gently stirring to evenly coat. Cover and let sit at room temperature 1 hour.
Preheat oven to 275°F. Line 2 baking sheets with parchment paper.
Spread zucchini in one layer and bake for 10 to 15 minutes, or until beginning to brown.
Carefully flip and bake 5 to 7 minutes more, or until crisp.
