Kelly's Vegan Chocolate Chunk cookies

1 3/4 cup whole wheat flour1 tsp baking soda1 tsp salt1/3 cup canola oil1/2 cup applesauce, unsweetened3/4 cup granulated sugar1/2 cup brown sugar, packed1 tsp vanilla extract2 eggs worth of Ener-g egg replacer 2 tsp cocoa powder, unsweetened5 1oz squares of baking chocolate, unsweetened or2 cups semi-sweet chocolate (vegan type)
1. Combine flour, baking soda and salt in small bowl.
2. Beat oil, applesauce, granulated sugar, brown sugar and vanilla in large mixer bowl.
3. Add egg replacer one at a time, beating well after each addition; gradually beat in flour mixture.
4. Stir in chocolate.
5. Drop by rounded tablespoon onto ungreased baking sheets.
6. Bake in preheated 375-degree oven for 12-15 minutes or until golden brown.
7. Let stand for 2 minutes; remove to wire racks to cool completely.
Makes 24 regular cookies, 16 large cookies
