1 TBLS Olive oil2 TBLS diced onion1 clove garlic minced2 cups cauliflower diced 1/2" pieces1 1/2 cups chicken broth1/4 cup almond milk plain unsweetened1/4 tsp. salt1/4 tsp. pepper1/4 tsp hot curry powder
in sauce pan, sauté onions and garlic in the olive oil until translucent, add cauliflower pieces, salt and pepper to taste then continue to sauté until golden brown bits are caramelized on the bottom of the pan. Add the curry powder to the broth then add 1 cup of the broth to the vegetables simmer until tender. Remove from heat and puree in blender, add almond milk, blend, then add remaining broth to achieve the texture you prefer. Sprinkle a dash of curry powder on soup for additional flavor if needed.
