Mimi's Spinach Pasta with Chicken, Mushrooms and Sun-Dried Tomatoes

Ingredients
Chicken Leg & Thigh- Roasted W/Skin, 3 serving Mozzarella Cheese, whole milk, 1 cup, shredded Parmesan Cheese, grated, 0.5 cup Sun Dried Tomatoes, 1 cup *Extra Virgin Olive Oil, 5 tbsp Spinach Pasta, cooked, 16 oz Mushrooms, canned, 0.5 cup )Salt, 2 tsp *Pepper, white, 1 tsp Garlic, 1 clove Chicken stock, home-prepared, 0.5 cup *Pine Nuts, 2 tbsp Onions, raw, 1 cup, chopped
Directions
Saute' Onions in olive oil with salt and pepper while boiling pasta according to package directions. Add mushrooms, garlic, tomatoes, chicken and stock. Cook until tender. Remove from heat and toss in pasta, using some of the reserved pasta water if needed. Add cheeses and pine nuts just before serving.
