Stuffed Delicata Squash

Ingredients
2 Delicata Squash cut into quarters and seededOne zucchini diced3 small tomatoes dicedhalf a large onion dicedtwo garlic cloves1/4c qunioa - cook before adding to recipe2 slices bacon diced3oz fresh mozarella
Directions
Saute bacon and then add onion and garlic. Add zuchinni and tomato after onion is cooked. Mix in cooked qunioa. Stuff squash, top with cheese and bake at 375 until the squash is tender.

Serving Size: 1/2 of a squash (2 pieces)
