Quick Balsamic Potato Salad

Ingredients
3 medium potatoes1 rib of celery0.25 cup balsamic vinegar1 tsp onion powder0.5 tsp garlic powder0.5 tsp thymesalt and pepper
Directions
1. Peel and cube 3 medium potatoes.
2. Boil approx. 15 minutes, until cooked.
3. Drain potatoes and let cool 10 min or until cool to touch.
4. Add 0.25 cup balsamic vinegar, onion powder, garlic powder, one chopped celery rib, thyme, and salt and pepper to taste. Mix well.

Makes 6 servings (approx 100 g per serving)
