1 Can Baby White Corn1 Can Pinto Beans1 Can Black Eyed Peas (optional)1 Can Black Beans1 Small Can Green Chiles1 Small Jar Pimentos Finely Dice:1 Medium Vadalia Onion 1 large Green & Red Bell Pepper1 Large Pablano Pepper2 Small Jalepeno Peppers 1 Tablespoon Fresh Finely Chopped Cilantro 1/2 Cup Apple Cider Vinegar4 Cloves Roasted Garlic 1/4 Cup Extra Virgin Olive Oil1/2 Cup Granulated Sugar1 Medium Avacado (Diced)1 Bag Tostitos Cantina Thin & Crispy Chips
Drain all of the canned/jar items. Then add them to a large mixing bowl, with the yummy veggies, and cilantro.
To make the dressing, stir the vinegar, olive oil, sugar, and garlic together in a pan. Bring to a boil, then remove from heat, and cool. Pour dressing over the mixture and toss to mix evenly. Then add the Avacado and mix gently.
Refrigerate for at least 1 hour.
