Fruit & Nut Bars

Ingredients
2 eggs⅓ cup brown sugar½ tbsp vanillazest of 1 lemonzest of 1 orange½ cup spelt flour½ tsp baking powder½ tsp salt½ cup chopped, pitted dates½ cup raisins1 cup roasted, salted chopped nuts (your favourite kind or a mix - walnuts, almonds, hazelnuts and pistachios are all great)
Directions
Preheat the oven to 350F, line an 8” square pan
Beat the eggs in a large bowl until light.
Add the sugar, vanilla and citrus zests, beating well.
Mix in the flour, baking powder and salt until combined, then fold in the fruit and nuts.
Pour into the pan, smoothing the top.
Bake 35 minutes. Cool completely in the pan.
