Zucchini Tomato Soup

Ingredients
2 small zucchini, coarsely chopped2 cups Spicy V81/4 cup chopped red onion1 1/2 tsp olive or canola oil1/8 tsp salt1 small tomato, cut into thin wedgesDash each pepper and dried basil2 Tbsp shredded cheddar cheese, optional1-2 Tbsp cooked crumbled bacon, optional*Nutritional Analysis is calculated without cheese and bacon
Directions
In a skillet, saute the zucchini and onion in oil until crisp-tender. Sprinkle with salt. Add the V8, tomato, pepper and basil; cook until heated through. Garnish with cheese and bacon if desired.
