MuShu Pork Lettuce Wraps

Ingredients
8 Iceberg Lettuce Leaves2 Tbsp. Soy Sauce, low sodium2 Tbsp. Dark Sesame Oil1 Tbsp. Hoisin Sauce1 tsp. Cornstarch8 oz. Pork Loin, trimmed\2 Tbsp. Coconut Oil2 c. Cabbage, shredded1/2 c. Carrots, cut into matchsticks1/2 c. Mushrooms, sliced1/2 c. Water Chestnuts, sliced3/4 c. Green Onions, sliced1/4 c. Water2 tsp. Garlic, minced
Directions
Remove and rinse 8 large lettuce leaves. Prepare vegetables, keeping separate. Slice pork into 1/4" X 1/4" strips.

In a medium bowl, combine soy sauce, sesame oil, hoisin and cornstarch. Add pork, mushrooms, water chestnuts and carrots to the sauce; toss to combine.

Heat a large skillet (or Wok) over medium-high heat. Add 1 Tbsp. Coconut oil. Add 1/4 c. onions, sauté 30 seconds. Add cabbage and water, sauté 2 minutes then remove from pan. Add remaining 1 Tbsp. Coconut oil. Add remaining onions and garlic and sauté 30 seconds. Add pork mixture, cook 3 minutes, stirring frequently. Add cabbage and toss to combine.

Serving Size: Makes 4, 2 wrap servings (approx. 1c. filling per serving)
