Tricky Tofu Guacamole

Ingredients
1/2 Tbsp Lemon Juice3/5 of a block of Extra Firm Tofu (=3 servings)3 Avocados, peeled and pitted1 tsp Chili Powder1/2 Black Pepper1 tsp Red Pepper Flakes1/2 tsp Salt1/2 tsp of Lemon Pepper Seasoning
Directions
Peel and pit avocados. Dice into a large mixing bowl. Drain and portion tofu. Remove two segments and store for other use. Dice remaining three portion segments. Add lemon juice and all spices to the bowl. Mash with a potato masher or fork until desired consistency. For chunkier guacamole, keep one half of diced avocado out for this process, then stir in after mashing. Chill for 1 hour, covered.
Serve with your favorite Mexican dish or tortilla chips. Makes 10, 1/4 cup servings (depends on size of avocados. I use average size Haas).
