Lemon seafood mix

Ingredients
1 pound uncooked shrimp1 pound scallops1 bunch green onions2 small zuccini2 large lemons4 cloves garlic (more or less to taste)1/2 bottle of dry to semi sweet white wine1 bell pepper, mix of yellow, red and green if wanted.(sliced)2 cups fresh sliced mushrooms4 cups instant rice
Directions
Slice and prepare all vegetables and seafood. Stir fry all vegetables with low fat margarine and add the garlic and fresh squeezed lemon juice to taste. Could take one or both lemons. Add seafood and mushrooms and let cook for 3-4 minutes and add wine, up to 1/2 the bottle. Let simmer for 5 minutes and then dish over cooked rice. Delicious--Will make approx. 8-1 cup servings
