Squash and Sausage Bundle

Ingredients
12 Cups butternut squash, cut into 1-inch cubes4 tbsp. olive oil1 tsp salt1 tsp ground black pepper2 tsp. sage4 medium granny smith apples, chopped1 large onion14 oz. smoked sausage, beef
Directions
Preheat oven to 375 degrees. Place the pared and cut squash in a large bowl. Add the olive oil and stir to coat. In a small bowl, combine the salt, pepper and sage. Add to squash and mix well. Lay a piece of heavy-duty aluminum foil on a large 18 x 12 rimmed baking sheet. The foil should be large enough to cover the pan plus hang over approximately 2 inches. Spread the squash onto the foil in an even layer, leaving 2-3 inches of foil around the edges. Sprinkle the apples and onions evenly over the top. Place the sausage slices on top. Place another large piece of aluminum foil on top and seal all the edges. Place the baking pan on the center oven rack and bake at 375 degrees for 50-60 minutes or until the squash is soft enough to be easily pierced with a fork. Be careful when you unseal the edges of the foil, as the steam will be very hot
