Grilled Eggplant & Vegetables Marinara low carb

Eggplant, 2 medium, sliced thick (peeled optional)2 raw red onions, sliced thick2 red bell pepper, seeds removed, sliced into thick strips1 package white button mushrooms, sliced thickOlive Oil, 4 tbsp Marinara Sauce (tomato sauce), 2 jarsor 4 cups home made
Brush grill or pan fry the eggplant slices in olive oil until soft and golden brown on both sides (approx 3 minutes on each side)
Layer the eggplant and other veggies with the marinara sauce. Start with a layer of sauce, then eggplant slices, then mushrooms and red pepper, then another layer of marinara sauce, eggplant and veggies and top it all off with marinara sauce.
Place in a hot oven (350 degrees) for 30 minutes until bubbly and the other veggies are cooked to your liking.
