Pumpkin Spice Pancakes with Pumpkin Butter

1 cup whole wheat flour2tsp baking powder1/4 tsp salt1/2 tsp cinnamon 1/2 tsp pumpkin pie spice1/4 cup pumpkin butter or canned pumpkin1 Tbs. Brown sugar1 cup 1%milk3 large egg whites2 tsp oil1 tsp vanillaButter flavored cooking spray1/2 cup pumpkin butter for topping, or maple syrup
Mix all dry ingredients in a bowl. Combine milk, egg whites and pumpkin in a bowl and mix with a spoon. Climbing wet ingredients with dry and mix well with a spoon till there are no more dry spots. Don't overmix.
Heat a large skillet on med heat. Spray pan to lightly coat and por 1/4 cup of batter. When pancake starts to bubble and edges set, flip pancakes. Each serving is two pancakes, top each serving with 2 Tbs pumpkin butter.
Serving Size: Makes 4 servings, 2 pancakes per serving
