Mediterranean Couscous Salad

Couscous, 2 cup, dry, yields Peppers, sweet, red, raw, sliced, 0.5 cupSpinach, frozen, 0.5 cup Asparagus, fresh, 0.5 cup Olive Oil, 1 tbsp Beans, black, 2 cupsLemon Juice, 4 wedgesOlive oil, 1 tbsp1 clove minced garlic
Cook couscous as per package.
Drained defrosted spinach well and warm in microwave or on stovetop with salt/pepper and one TB of olive oil.
chop red pepper , asparagus and green onions into small pieces.
Drain black beans well and put aside.
Add the spinach, diced veggies and black beans to the cooled couscous.
sprinkle with the viniagrette and fresh parsley.
For viniagrette - using a whisk, mix together the lemon juice with the 1 tb of olive oil and the minced garlic. Pour over top of couscous.
Let stand for 10 minutes before serving.
Fluff with a fork
Enjoy!
