Pumpkin Protein Bars

Ingredients
1.5 Cup Stevia in the Raw1/2 Cup natural (no sugar added) applesauce1 TBS. ground cinnamon3 tsp. Pumpkin Pie Spice OR 1 ½ tsp. ground ginger &½ tsp. ground clove1 tsp. baking powder1 tsp. baking soda½ tsp. salt1 TBS. vanilla extract1 Egg3 large egg whites1 - 15 oz. can of raw pumpkin1.5 C oat flour1 Cup quick oats2 scoops vanilla protein powder (I use SunWarrior)½ cup almond milkYou can use:½ C chopped walnuts (optional) This is not added in the nutritional value of recipe I did not use them.Directions:Preheat the oven to 350.Spray a 9 X 13 Pyrex dish with non-stick spray.Combine first 11 ingredients and mix well.Add the final 3 ingredients (4, if adding walnuts), and mix until incorporated. Spread batter into the Pyrex dish and bake for 30 min.Makes 24 squares.
