Chicken Cacciatore

1 whole cut up chicken (no back or giblets, about 3 lbs)1 large can of peeled tomatoes1 whole bell pepper, seeded and cut into chunks2 Tbsp minced garlic1 large onion, diced large1 med can quartered artichoke hearts, drained2 Tbsp olive oil
Heat oil in Dutch oven.
Lightly brown chicken pieces, about 5 minutes per side. Remove from pan and keep warm.
Add onion to pan and saute until semi-translucent. Add garlic and saute 1 minute more.
Put chicken back in Dutch oven and add tomatoes, bell peppers, and white wine.
Bring to boil and then turn down the heat to simmer.
Simmer, covered, 40 minutes.
Add drained artichokes and let simmer, uncovered, 15 minutes.
Serve!
