Sweet Potato Salad

2 large sweet potato, peeled and cubed1/4 cup olive oil2 Tbsp red wine vinegar 9instead of cider vinegar)1 Tbsp Splenda brown sugar mix1 1/2 Tsp Thyme2 stalks celery, diced2 green onions, sliced1 cup shredded carrots1 cup been sprouts1 cup pecan pieces, roughly chopped
Boil sweet potato cubes for 5 minutes (until fork tender), drain and allow to cool. Whisk olive oil, vinegar, brown sugar and thyme together to make dressing. Toss celery, onions, carrots, sprouts and pecans together with the dressing. Add potato cubes, toss lightly.
