Tuna and Vegetable Roll for One

Ingredients
2 sheets Phyllo (Filo) pastry @1 1/5 oz (40 g) I use the chilled Filo if you can get it.50 grams (1 3/4 oz) frozen mixed vegetables cooked90 grams (3 1/4 oz) tuna packed in water, drained weight40 grams (1 1/2 oz) cottage cheese, low fat1 tblspn green onions, finely chopped1/4 tsp garlic powder1/4 tsp onion powderNote: You can also use non fat sour cream instead of the cottage cheese.
Directions
Spray 1 sheet of Phyllo pastry with canola spray and place the other on top.
Mix all other ingredients together, and place at one end of the pastry.
Roll up, tucking in the ends, and seal the end with a little water.
Place on a greased baking tray and spray lightly with canola spray.
Bake at 350 dec F (180 deg C) for @ 20 minutes until brown.

    Pretty yummy. The cottage cheese melts surprisingly well. I made it on a hi fiber/hi protein wrap. It may be better nutritionally than phyllo. - 4/7/08
