Cherry tomato jam

Ingredients
Cherry tomatoes, shallots, garlic, olive oil. Add herbs and spices to taste. Quantities don really matter, go easy on the oil and use up what you've got.
Directions
Mince garlic and slice shallot. Toss tomatoes, garlic and shallot with olive oil. Roast at 350 until tomatoes soften and burst.
