Fava Bean Salad

Ingredients

1 lb bag fava beans1 large tomato, diced1 large onion, diced1/4 cup parsley, chopped1 1/2 Tbsp olive oil1/4 cup lemon juice (2 large lemons)1 tsp cumin
1. Cook fava beans in water according to package directions. Save a little of the water in the beans.
2. Chop up the tomato, onion, and parsley. Add to the beans.
3. Add the olive oil, lemon juice, and cumin to the bean mixture and heat over low heat about five minutes.
4. Serve
