Baked Apple French Toast

8 slices whole wheat bread2 eggs4 egg whites1 cup milk, nonfat1/4 cup granulated sugar, divided2 tsp vanilla2 granny smith apples1 tbsp cinnamon1 tbsp unsalted butter1/2 tsp nutmeg
Preheat oven to 400 degrees.
Spray 9x13 pan with non-stick spray. Lay bread slices tightly together in a single layer.
Beat eggs; add milk, 2 tbsp sugar, nutmeg and vanilla. Pour half of the liquid over the bread. Peel, core, and slice apples into rings. Place apple rings on top of bread. Pour remaining liquid over apples.
Mix remaining 2 tbsp sugar with cinnamon and sprinkle evenly over apples. Dot with butter.
Bake for 25 minutes or until browned on top. Cool a few minutes before serving.
