Moroccan Turkey Stew

1 tbsp olive oil1 small onion, halved and sliced thinly6 cloves garlic, minced1 Hungarian wax pepper, halved, seeded and diced1 ½ cups shredded carrots½ medium zucchini, shredded or diced10 oz cooked, chopped turkey (or chicken) meat½ tbsp ground cinnamon¼ tsp ground allspice1 tsp ground cumin1 tsp paprika1 tsp dried thyme1 (29 oz) can diced tomatoes½ cup turkey or chicken stock1 tbsp honey7 oz chopped green beans
Heat oil in a deep pot over medium heat.
Add onion and cook until golden, about 8-10 minutes.
Stir in garlic, peppers, carrots and zucchini. Cook 5 minutes, until softened.
Stir in chicken, spices, tomatoes, stock and honey. Cover and simmer 30 minutes.
Add beans, re-cover and cook 5 minutes.
Serving Size: Makes 6 hearty servings over rice or couscous
