Sweet Potatoes Dish

1/4 cup sugar free maple syrup1 TBSP fresh orange zest2 oz. frozen orange juice concentrate1/4 cup finely chopped pecans15 med (2" dia. X 5" long) sweet potatoes
1. Roast scrubbed and pierced sweet potatoes in a 400 degree oven for about an hour and then let cool so they can be handled easily.
2. Prepare large baking dish with baking spray.
3. In a small bowl, combine syrup, orange juice & zest, and pecans.
4. Peel and dice sweet potatoes into the casserole dish and evenly apply syrup mixture over sweet potatoes.
5. return to the oven and bake until heated thoroughly and slightly bubbly.
Serving Size: yields 16 servings, approximately 1/2 cup each
