Turkey, blue cheese, and spinach Quesadillas

1 lb of ground turkey cooked3 tbsp taco sauce4 large burrito-size wheat tortillas1/2 c. blue cheese crumbles10 oz frozen spinach, thawed and squeezed dry1/2 tsp red pepper flakes
1. Stir together turkey and taco sauce
2. Lay two tortillas on a flat surface, divide meat between them. Sprinkle each with half the cheese, spinach, and red pepper flakes, cover each with remaining tortilla.
3. Use skillet over medium high heat. Cook 3-4 minutes on each side.
4. Cut each quesadilla into 8 wedges and serve. Yields 2 wedges per serving.
