1 cup quinoa, cooked (1/2 C dry)3 tablespoons pumpkin puree (not pumpkin pie filling!)1 teaspoon cinnamon1.5 teaspoons pumpkin pie spice6 ounces vanilla yogurt
Mix cooked quinoa, pumpkin puree, cinnamon, and pumpkin pie spice until well combined. Layer the pumpkin mixture and yogurt. Garnish with granola or chopped apple. (Not included in nutrition calculation.)
