Slow Cooker Beef Enchiladas

Ingredients
6 taco size low carb tortillas2 cans chili beans1 can enchilada sauce2 cans diced tomatoes with green chilies1 medium onion, chopped1 large bell pepper1 pound lean ground beef2 C reduced fat shredded cheddar
Directions
Brown ground beef, drain fat
Add onion and bell pepper to meat
Add beans, tomatoes & chilies, and enchilada sauce to meat
Simmer about 10 minutes
In a 5 quart round crockpot layer about 3/4 meat mixture, 1 tortilla, and shredded cheese.
Repeat layers
Cover and cook on low 5 to 7 hours until heated through
