8 1/8inch slices lengthwise Zucchini2 tbsp Extra Virgin Olive Oil2 tbsp Tomato chopped2 tbsp Parsley chopped2 oz Cheese - Neufchatel Salt and pepper to taste
Preheat grill or broiler. Brush zucchini with Olive oil and grill 2-3 min on each side until lightly brown. Let cool slightly. Spread each with 1/8 of the cheese. Top with 1 teaspoon tomato and 1 teaspoon parsley season with salt and pepper to taste. Roll up like jelly-roll and secure with a toothpick. Serve Immediately.
